Crockpot Beef Stew

Ingredients:
2 pounds beef stew meat, cut in 1-inch cubes, 1/4 cups flour, 1/2 teaspoon salt, 1/2 teaspoon pepper,

Directions:
Put meat in Crock-pot. Mix flour, salt and pepper, and pour over meat; stir to coat meat with flour. Add remaining ingredients and stir to mix well. Cover; cook on low 10 to 12 hours (High: 4 to 6). Stir stew thoroughly before serving. 6 servings. From the Kitchen of Jennifer Hancock

Easy Mashed Potatoes

Ingredients:
1 lb. baking potatoes, 1/4 C. butter, 1/2 C. warm 2% milk, 1 tsp. salt

Directions:
Dice and boil baking potatoes for about 15 minutes. When potatoes are soft, drain excess water and mash either with a fork or a mixer. Add butter and salt. Only add milk after potatoes are mashed otherwise they'll clump and you won't have smooth, creamy mashed potatoes.

Vegetable Soup

Ingredients:
Beef shank - boil with salt and pepper - pan 3/4 full with cold water, bay leaf, 1/2 onion, parsnip, celery stock end - cook low 4 hours. Add carrots, celery, onion, parsnip seasonings, and potatoes. cook until tender.

Turkey Casserole

Ingredients:
2 C sliced turkey, 1 pkg. frozen French cut green beans, cooked until tender, 1/4 C sliced blanched almonds, 1 can cream of mushroom soup, 2 C stuffing (Stove Top or Pepperidge Farm), 1/2 c milk, 1/4 hot water

Directions:
In buttered shallow baking dish put 2/3 C. stuffing crumbs. Arrange beans in layers over crumbs. Then scatter almonds over this followed by the turkey slices. Blend milk and mushroom soup and pour over the casserole. Top with remaining stuffing crumbs blended with 1/4 c. hot water. Bake 400 degrees for 25-30 min.

Snacks


Fruit Strips

Ingredients:
1 1/2 C. fruit puree such as apricot, plum, peach, or strawberry and 1/2 tsp. lemon juice

Directions:
Combine ingredients into a saucepan and bring to boil over medium heat, stirring. When thick, remove from heat and cool slightly. Cover a cookie sheet with foil. Spray foil with cooking grease. Pour mixture over foil and let it spread to approximately 1/4 inch thick. Place in a 300 degree oven for 25 minutes. Then turn off the oven and let the fruit dry with the door closed for about 8 hours (overnight). Tear into strips and serve. Serves 3-4. Granola

Ingredients:
1 T vanilla, 3 C oatmeal, 1 C wheat germ, 1 C sunflower seeds, 1 C sesame seeds, 1 C coconut, 1/2 C almonds, 3/4 c brown sugar, 1/3 C honey, 1/3 C oil, 1/3 C water

Directions:
Mix with hands, spread on cookie sheet and bake at 300 degrees for 45 minutes. Stir often. Store in tight containers.
