These moist and dense muffins are a hearty way to start your morning. They are great with apples or raisins and taste like a warm bowl of oatmeal!
1 cup whole grain flour (I love spelt or kamut but wheat works also)
1 1/2 cups oats
1/3 cup coconut sugar or brown sugar
1 1/2 tsp. baking powder
3/4 tsp. sea salt
1/3 cup coconut oil or avocado oil
2/3 cup milk of choice
1/4 cup honey
1 cup chopped apples or 1/2 cup raisins
Mix all dry ingredients then add in wet ingredients. Stir till moist and fold
in fruit. Bake at 350 for about 18 minutes or until golden.
